The Ancestral Mezcal Quiz

NOM-070-SCFI-2016 defines three categories: Mezcal (permissive), Artesanal (mid-tier), and Ancestral (strictest). Ancestral requires pit ovens, mallet or tahona milling only, and clay pot distillation with fiber included.

Ancestral distillation must occur in wood-fired clay pot stills with the agave fiber (bagazo) included in the still itself. Copper, stainless, and columns are all prohibited in the ancestral category.

Ancestral method is genuinely rare — less than 1% of certified production. Most premium 'ancestral method' bottles ship under the Artesanal designation to avoid the friction of ancestral certification.

Santa Catarina Minas — home to Real Minero, Lalocura, Del Maguey Minero, and Rezpiral's clay-pot bottlings. Nearly every serious palenque in the village still uses clay pot distillation as the default.

All four are varietals within Agave karwinskii — the tall, tree-form family of agaves that dominates Miahuatlán and gives Sierra Sur mezcals their characteristic dry-mineral profile.

The gap between method-ancestral and certified-ancestral is real. Real Minero, Lalocura, and many others use ancestral methods but skip the certification because per-batch inspection fees are prohibitive for small palenques.

Destilado de agave is the extra-legal category for agave spirits produced outside the mezcal Denominación de Origen. Mezonte's Jalisco and Michoacán producers ship this way — often making ancestral-method spirits, but legally prohibited from calling them 'mezcal.'

Tepeztate (Agave marmorata) takes 20-25 years to reach maturity — one of the slowest agaves used in mezcal. Combined with cliff-face growing habits and low yields, this is why Tepeztate bottles run $150-300+.

This is one of the defining rules of the ancestral category. The bagazo — the crushed agave fiber left after milling — must be included in the still along with the fermented mosto. Ancestral is the only category where fiber-in-still is mandatory.

Mezonte works with palenqueros in Jalisco and Michoacán, largely outside the mezcal DO. Their bottles ship as 'destilado de agave' regardless of production method — including bottlings that would qualify as ancestral if they came from Oaxaca.
