Barril is a Karwinskii varietal named for the barrel-like shape of its piñas — noticeably rounder and stouter than the vertical columnar profile of Cuixe or Madrecuixe. This morphology reflects a slightly different growth pattern within the Karwinskii genetic family, and the flavor tends to follow.

Where Cuixe leans green-herbal and Madrecuixe leans savory, Barril leans elegant. Expect citrus peel (grapefruit, dried orange), warm spice, wet stone, and a rounder mouthfeel than its Karwinskii siblings. Barril is often the “welcoming” Karwinskii for drinkers who found Cuixe or Madrecuixe too dry or aggressive.

There’s a subgroup of Barril from the Zona Refrescadera — the cooler-climate zone around San Baltazar Guelavila — sometimes labeled San Martinero. The San Martinero microclimate produces a slightly softer, riper expression, worth seeking out for anyone building a Karwinskii-varietal flight.

Prices tend to run $130-200+ for premium single-village Barril. Because the piña is larger than most other Karwinskii varietals, yields per plant are slightly better and prices are marginally more accessible than Cuixe or Tobasiche.
